Pear Cardamon Muffin Recipe Gluten Free

for Sunday Morning Brunch

Sunday brunch.
Just the words make me relax.
I’d love to imagine that my Sundays have this lazy start to the day, but it infrequently happens.
See, I’m one of those folks who just can’t sleep in. My typical day starts before 6am weekdays and rarely can I sleep beyond 7am on weekends.
But in the Sunday of my dreams, I would have a lazy brunch with my husband and kids, accompanied by the dead tree edition of the NY Times, just got to check out the other weddings.
This quickly stirred together muffin would be the perfect touch. Spicy cardamom playing off of the tender pear chunks, crunchy with pearl sugar.

The combination of pears and cardamom is one of my favorites, especially in fall. I found the pearl sugar in the food area of Ikea around Christmas time. It is a traditional Scandinavian decoration for baked goods. but the larger crystals of raw sugar are just as pretty.
Serves: 12
  • ½ cup brown rice flour
  • 2 tablespoons millet flour
  • ¼ cup tapioca flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ cup sugar
  • pinch of salt
  • 1 packed teaspoon Pixie Dust
  • ½ teaspoon cardamom powder
  • Wet:
  • 1 egg
  • 2 tablespoons sour cream
  • 2 tablespoons melted butter
  • ½ teaspoon vanilla extract
  • 1 pear- peeled and cut into tiny cubes
  • 2 teaspoons pearl sugar or 1 teaspoon raw sugar (if desired)
  1. Preheat oven to 350 degrees
  2. grease a 6 cup muffin tin well with oil or cooking spray
  3. Combine all the dry ingredients in a bowl and whisk together till one color.
  4. In a separate bowl, whisk together the wets till one color.
  5. Combine the two mixtures with a spatula, stirring till the batter is smooth and beige. It will be stiff at this point.
  6. Fold in the pears and mix till their juices loosen the batter.
  7. Place batter into the prepared muffin tins.
  8. Sprinkle with pearl or raw sugar for decoration
  9. Bake for 24-25 minutes till the muffins are lightly browned and pull away from the sides.
  10. Turn out onto cooling rack and allow to cool before eating.
