Cranberry Orange Muffins
Preheat oven to 350 Yield: 8 muffins
3/4 cup dried cranberries-chopped
1 large organic orange-peel grated and fruit sectioned
2 eggs
1/3 cup oil
1/2 cup yogurt
1 cup whole grain gluten free flour mix
Stir together cranberries, orange peel, and orange segments. Let sit for 5 minutes
Beat eggs, oil and yogurt together. Stir together all ingredients.
Scoop into well greased muffin tins. Bake 20-25 minutes.Remove from pans and allow to cool
